YAY! A Helpful Transition book to Vegan

I want my family to become vegan. This is not an easy task. My husband must be the Chancellor of all Carnivores. In the meantime, this gets them used to eating less meat.
This is NOT a Vegan cookbook by any means. But rather a book where vegetables take center stage. Butter, cheese, etc. make an appearance here so vegans don't be disappointed.
The recipes turn out well and are tasty, even to the Head Carnivore.

What is YOUR definition of vegetarianism?

Does it include beef stock and bacon? If so, this is the cookbook for you.
I am well aware that those who identify as "vegetarian" often stretch the definition to suit their preferences. Some include all animal products, including eggs, dairy, and honey (many would recognize them as vegan) while others are content with cutting meat out of their diets (no mammals, poultry, or seafood). Others prefer a more pescetarian diet, where fish and seafood are fair game, but all other meat is forbidden. Still others stretch the definition to its ultimate limits by claiming that refraining from red meat classifies one as "practically" vegetarian. These are the people who often assume you're judging them when they find out that you don't eat meat.
I am not an evangelist for vegetarianism, though I have been one (of the non-meat eating kind - see the second definition above) for thirteen years and I buy vegetarian cookbooks, not as a means of asserting my vegetarian identity, but for convenience's sake so I don't have to figure out how to modify traditional recipes when it comes time to make dinner.
I bought this book because it was cheap (7.99 at Borders), it has lots of beautiful pictures, not only of the finished dishes, but also several pictures of important or complicated steps within recipes, and a quick skimming of the recipe titles revealed several unique dishes that couldn't be found in my other cookbooks. I also didn't mind the section entitled "virtually vegetarian" since most of my dinner guests are not vegetarians and I try not to force my own lifestyle choices on my friends.
When I got the book home, however, I was dismayed to find that many of the recipes included meat products in their ingredients. Several of the recipes called for chicken or beef stock, which, granted, could easily be replaced with vegetable stock (See Classic French Onion Soup, Carrot and Coriander Soup, Borscht, etc.). However, one recipe even called for bacon (Onion Squash Risotto)! I would understand if these were relegated to the "virtually vegetarian" section, but you'll find these recipes throughout the book, mostly in the soups and starters section.
Also, if you're trying to stay trim, steer clear. Many of the recipes call for lots of butter, cream, excessive amounts of cheese, and sugar. You'll also be doing a lot of frying.
Considering all of this, I was able to find a few truly vegetarian recipes that appear to be relatively healthy. I don't think they were worth all the trouble it took to find them, though.

Great Book

This book is wonderful and provides some delicious recipes that are quick, easy, and totally vegetarian. In the beginning of the book there is a section on the overview of multiple vegetables, fruits, beans, and peas; as to acquaint the reader with the history, use, and some cooking methods for these foods. This book gives great recipes that will allow for variety, color, and fun to a vegetarian diet. Some wonderful recipes are: Spaghetti with Feta, Classic French Onion Soup, Sweetcorn and Potato Chowder, Tagliatelle with Hit The Pan Salsa, and Spinach Gnocchi. I recommend this book for anyone who wants to add more vegetable based meals to their diet. Some recipes do call for animal based products; however, the book is a wonderful starting point to garner ideas. You can always alter the recipes to be vegetarian. Great Book!
