Classic Marianski Brothers Sausage Book

I have the 'Bookmagic' (2008) revised edition of 'The Art of Making Fermented Sausages, in addition to other sausage making books by the brothers.

Maybe the best way into reviewing this book is to ask 'who would/should buy it?' Any 'foodie' who is curious about where the pepperoni on their pizza came from will learn a lot about the whole class of 'fermented meat sausages.' The same goes for customers at local deli counters in mega-marts who are buying a range of salamis. 'Home-style' and commercial methods and chemicals are explained from the practical standpoint of which substance does what important thing in producing flavour while promoting food safety. 'Aspirational' (want-to, someday) sausage makers will find a usable, detailed guide to the equipment list that will be the major barrier to most of us in making fermented sausage at home. The 'easy' part of making fermented sausage is the chemistry--for practical purposes, the cure mixes and starter cultures so clearly explained by the authors. 'Meatheads'--meat fanatics--will definitely want this book on their shelves--for the (some) fifty classic recipes for fermented sausages, even including one or two from the Asian sausage kitchen. The emphasis in the recipe section is definitely European, northern and southern.

The book begins with a workmanlike 'history' of fermented meats. The brothers introduce 'New Concepts' including what we now know about controlling available water, pH, temperature and humidity to produce fermented sausage. We are introduced to 'more than we need to understand' material about types of bacteria, how they multiply and what controls that multiplication, color and flavour-forming reactions and the like. In chapter four, sausage makers will learn plenty about the two basic approaches to controlling bacteria while producing color and flavour: slow fermentation and fast fermentation. The 'liberating stuff' comes in chapter five, with a practical overview of 'starter cultures', the key to modern production at home or in the factory, of quality fermented sausages. The recipe section includes items I have never tasted, let alone made. Items I have made or tasted in artisanal production include: cervelat, chorizo, farmer sausage, Medwurst, Merguez, Braunschweiger and Summer Sausage. Well, I have also eaten Mortadella, plenty of Pepperoni, Genoa Salami, Salchichon and Thuringer sausages. A reader will have a very fine understanding of how each and every one of these sausages is made. The book abounds with helpful notes and technical tables, with source attribution for any true sausage maker who can make the equipment to venture into these subjects.

I must come back to the 'equipment list.' Home handymen will not have any problems in following the Marianski brothers' descriptions/photographs for converting a foam insulated cabinet (old refrigerator) to make a temperature/humidity-controlled tool/environment for home-aging cuts of beef, curing hams or for making a whole range of fermented sausage products. Having dedicated refrigerator space for long-term drying and curing of sausages is also stressed in the book. With fermented sausage products, control of temperature during every step of processing from 'breaking down' larger cuts of meat through grinding and on into fermentation is critical. Equally important, measuring pH (acid-base continuum) in the meat and controlling and measuring humidity (which needs to change at various stages of fermentation and drying) requires some simple and inexpensive instruments that will not be found around the house. Unfortunately, it does not seem that all of this equipment comes from the commercial marketplace in any affordable package sized for the 'home' sausage producer. If you want to make sausage and are handy, this is the book for you!

What makes this a Marianski Brothers' 'classic?' They are thorough but repetitive about processes and chemistry, as other reviewers have noted. If YOU get the point they are making, move on and glance over the same/similar material the next time it comes up. I feel the authors use repetition as a teaching tool. Above all, they aim to produce instructional books about their craft. In the end, all the 'chemistry' is 'nice to know' and you will be more comfortable with whatever you pick up about 'why' as well as 'how', but it comes down to using careful measurements of ingredients listed in their recipes and following recommended procedures. Our forefathers weren't food scientists either.

Needs an editor and a proofreader, but still a bargain

Like other recent books by the Marianski's this one is self-published, through Outskirts Press, and it clearly has not benefited from the services of a professional editor or proofreader. The book is littered with grammar mistakes, typographical errors, and odd locutions. The way the text is organized, they end up covering the same subjects from multiple angles, with the result that they repeat themselves over and over. Sometimes the organization simply seems haphazard, with "notes" appearing at the end of a section which could be more accurately labeled "afterthoughts." The information presented is clear and accurate; just don't expect a gripping read.

This book is definitely a useful addition for any other meathead out there wanting to try and make fermented sausages at home. As a book dedicated to this subject, they go deeper into the issues of chemistry, microbiology, sanitation, and equipment (for smoking, fermenting, and drying) that all affect the quality of the finished product. The second part contains 50 detailed recipes, with precise measurements in grams, so that even a relative newcomer to this craft can proceed with confidence. This book usefully bridges the gap between simpler cookbooks and advanced textbooks such as Fidel Toldrá's Handbook of Fermented Meat and Poultry (which sells for $200). At $20, even with all its faults on its head, this book is a bargain.

Bought the book thinking yeah right...try to make salami in Peoria, AZ with our triple digit summer temperatures. When I received my books (i.e. also bought the Marianski's Meat Smoking Book too...), I can't seem to put either of them down. It's full of good down to earth information. My God, whoever gives this book less than 4 stars needs their head examined. It is so full of good information put together by a remarkable man and his sons. I mean think about it...this art of Salami making is thousands of years old, masked in mystery like an ancient guild, hidden away by those select few. The mystery is now solved and ready to be explored. The Art of Salami making is the most challenging, most time consuming "art" of sausage making. Think of these men as having Doctorates in Practical Microbiology. This book is suitable for the Novice up through the Purist. Myself being an Engineer with 35 years in the work place find it fascinating reading. It is so detailed on just about every aspect of salami making, yet easy to read and understand. This book is suitable for those who are frugal and those with more money than brains. Most importantly, the Marianski's stress the safety aspects associated with this "Art." You're given the tools to deal with a food preparation process that could be very harmful if not followed explicitly. People at my work think I'm nuts, because I've always got my nose in this book. I've made Homebrew, wine, cheese, jerky, sausages and I have never read anything as detailed and understandable as this book. I can't wait to get started making salami with my sons and build some family traditions for my own legacy. If I could, I would give this book 10 stars. Good luck my friends in your art of making fermented sausages. And as a man once told me..."Relax, don't worry have a Homebrew" and I did.....

Coherent Coverage of the last Four Panics

First, what this book isn't, then what it is. Panic is NOT a "Michael Lewis Book." In other words, it's not "Liars Poker" or "MoneyBall" the classics written entirely by him, which will disappoint some readers.

This book is a series of articles that form a coherent whole, discussing the four "once in a millennium" financial meltdowns we had in the last 25 years. Michael Lewis weaves them together by contributing a chapter to each of the four parts. His portions are of course the most readable and interesting (although Dave Barry gives him a run for his money writing about how to get rich in real estate). For readers that lived through these times, this book is a nice recap to jog memories for brains that may fade with time and for those that are new to the markets and think the crash of 2008 in unusual, this may be an eye-opener.

Michael Lewis's message is "financial panics have become almost commonplace; events that are to meant to occur once in a millennium now seem to occur every few years. Could this be because the financial system was built on an idea that badly underestimates the risk of catastrophes - and so conspires with human nature to create them?" After studying all four of these major panics, he also concludes that the press was at least partly complicit in the inflation of these bubbles.

Lewis starts with the crash of 87, writing "Black Monday was the first of a breed: a crash the suggested disastrous economic and social consequences but in the end had no serious effects at all." He writes: "the sweet logic of Black-Scholes was shown to be irrelevant in the real world of crashes and panics." It is truly dumbfounding how a theory that seemed to have been proved invalid on one destructive day persisted anyway, in a different form. He writes: "This is interesting: The very theory underlying all insurance against financial panic falls apart in the face of an actual panic. A few smart traders may have abandoned the theory, but the market itself hasn't." After this introduction, Lewis and others take us on a ride through not one panic, but four gnarly collapses.

The Crash of 87. Lewis marvels at how wrong observers were in the aftermath of the crash of 1987, which wiped out more than 20% of stock market value in one day: "New York Times wrote that these yuppies are unprepared and unconditioned for the hard times to come. But as it turned out, those yuppies were so well prepared that they survived to create many more crashes."

Before the crash, the atmosphere in the markets was akin to that of the dot-com bubble - some of the quotes are priceless. An LA screenwriter and amateur stock investor says: "It's so simple, it's insane. If you do this carefully, it's like picking money off trees." But no party lasts forever, and "with the stock market crash the market in junk bonds, inextricably linked to the asset values of corporations, temporarily ceased to function altogether." Sound familiar? One of the reasons people prefer Michael Lewis's style of writing to typical Wall Street journalists is this line: "It was striking how little control we had of events, particularly in view of how assiduously we cultivated the appearance of being in charge by smoking big cigars and saying [...] all the time."

The Asian/Russian/Long-Term Capital Crash. Wall Street always finds a new confidence game. Lewis starts this section by writing: "This section, describes not the fall, but the rise of the ever more highly mobile financier, running ever more highly mobile money...obviously the poor guy in Thailand who lost his company doesn't think of his crisis as a Wall Street subplot. But on Wall Street, that's what it was. Capital was fast. It was about to become even faster." This panic occurred during the rise of widespread use of computers on Wall Street. In this panic, "traders are glued to their screens whenever stories flash across about Clinton's sex life or Yeltsin's drinking habits. They have no interest in what Bill Clinton or Yeltsin say about the Russian Ruble - they prefer to hear from George Soros."

The L.T.C.M debacle is neatly summed up: "the best minds were destroyed by the oldest and most famously addictive drug in finance, leverage." Also mentioned is the fact that Goldman Sachs saw the LTCM "book" and may have traded against them - more fodder for those that question the practices of Goldman.

The best nugget on the LTCM was John Merriweather, quoting one of his analysts: "I like the way Victor put it: The hurricane is not more or less likely to hit because more hurricane insurance has been written. In the financial markets this is not true. The more people write financial insurance, the more likely it is that a disaster will happen, because the people who know you have sold the insurance can make it happen."

The seeds of the current subprime debacle appear to be sown in 1998. Lewis writes: "In October 1987, the markets took power from the people who traded with their intuition and bestowed it upon people who trade with their formulas. In August 1998, the markets took power away from people with formulas and bestowed it upon the large Wall Street firms that oversee the marketplace." This sounds prescient today.

The dot-com collapse. Lewis tells the tale of the dot-com bubble as he describes how Jim Clark couldn't even get a meeting with Salomon Brothers to take Silicon Graphics public, but a few years later had people fighting to take ill-fated Healtheon public.

My favorite part of the dot-com portion of the book is how Madoff, now public enemy number one, would not allow trading in Amazon on margin. Lewis writes: "To Mr. Madoff, it was insanity. This thing was getting out of control." No worries, Madoff made it through the October 1987 crash - as Nasdaq's chairman. No wonder he survived - the money wasn't in stocks.

Even Cramer got hurt by the dot-com crash saying "I feel I went from being, you know, top of the game to pretty humiliated." Of course, he reinvented himself from dot-com company founder to discredited CNBC TV guru.

My favorite part of this section is how a Sr. VP for marketing for [...] derides all the other dot-bombs that spent $6 million for 30 second commercials during the superbowl. He says "I have the luxury of saying this because we have a brand." Today, they don't even have that.

Also wonderful for schadenfreude is revisiting the fact that Launny Steffens of Merrill saying the internet was "a serious threat to American's financial lives" weeks before launching internet mutual funds and having Henry Blodgett as pitchman for money- losing internet IPOs. Lewis says Wall Street will never be cleaned up and "A boom without crooks is like a dog without fleas. It just doesn't happen."

Suprime/Real Estate/Wall Street collapse of 2008. Lewis calls this "The People's Panic" since it "has yet to find its one big culprit, and not sure it ever will." This panic was different from the others due to "the sheer amount of destruction it's caused inside big Wall Street firms." Of course, like every other panic, Lewis caveats: "But that doesn't mean the game is over." He discusses John Paulson, who took home over $3.7 billion in one year by shorting subprime - more money than anyone has ever made on Wall Street in a year.

Dave Barry's "How to get Rich in Real Estate" in this section is fantastic. The silliest part is a picture of Suze Orman with the caption: "The most deadly critter is the dry-rot fungus, an organism made up of tiny but voracious spores that, when magnified 127,000 times, look like this:" He says mistake number one is to buy an old house, and follows it up with mistake number two, buying a new house: "Unlike old houses, which fall apart over time, new houses start falling apart immediately. Often the last subcontractors on the job have to spring from the house as it begins to collapse around them, like Indiana Jones in the Temple of Doom." The house price collapse was not unique, as he reminds us in a chapter which says that between 1989 and 1995, house prices in San Francisco fell by 40%.

Lewis skewers Jim Cramer, recalling the "buy" rating on Bear Stearns at $62 only days before it was sold for $2 and eventually $10 per share to JP Morgan. No one on Wall Street is spared - in one part of this section the book makes the assertion that the Hedge Fund industry may be built on a series of lies. "For the past decade, it's explosive growth has been based on a simple claim: that skilled money managers, motivated by high performance fees, could outperform the market when it was going up - and sidestep the trouble when it was going down. And yet the credit crunch has shown that to be a myth." Academics claim returns were distorted, and some fund managers were "outright con artists."

Ultimately, the ending is the conclusion that there is no end to financial panics. "The cycles of euphoria and panic have become more and more thrilling: whoever has been seeking to minimize drama in the financial markets has been doing a poor job of it." Perhaps this is the nature of global capitalism - "ever more complex, ever more opaque, ever faster booms and busts."

Not what it appears to be...

I really like Michael Lewis's work. In fact, I have read everything he has written, from Liar's Poker to The Blind Side. The guy is, in a word, gifted.

So, imagine my delight when I saw (while I was rushing through an airport) a new book by Michael. I purchased the book, and could hardly wait to start reading it. When I finally got in the plane, and opened the book, I discovered that the writings in the book were not Lewis at all, but rather a collection of no-so-interesting articles about the various financial crashes.

Nothing is staler than yesterday's Wall Street journal (financial news spoils quickly) and reading WSJ or Barron's pieces from 10 to 20 years ago is just painful.

The title PANIC: The story of modern financial insanity led me to believe the book was about the current crises. The book does say, in very, very fine print "Edited by" Michael Lewis.

I feel I was misled....shame on you Michael for lending your name to this and shame on your publisher

Very Misleading

As I look at the Amazon product page for the book I've just received, there's nothing that indicates that this is NOT a book written by Michael Lewis. Rather, it's a collection of short articles (a lot of them, probably 50-75 in total, of which he wrote 6) that he selected to discuss various topics. My rating doesn't reflect the quality of the articles - I'm sure they're good, and I've actually read some of them in the past year. My rating reflects the fact that this isn't a new Michael Lewis book, and that isn't indicated anywhere. Disappointing.

4th and 5th editions are completely different

I ordered the solutions manual for the 4th edition, but Amazon sent the 5th edition one. They are not at all the same! I had to send it back and look for a 4th edition somewhere else.

Good book on engineering drawing

The text is informative and has a ton of practice exercises. If you actually sit down and learn the material you'll be great at free hand sketching for engineering. It teaches conventions on how to read engineering drawings and is really a great introduction to the subject matter. The problem is it's a vast amount of information and actually doing all or even most of the drawing exercises would take ages, and anymore a lot of engineering work is done on computer software that already has the conventions programmed in. The book is great for what it is and if you're purchasing it you're probably doing it for school.

Fundamentals of Drafting Text Book

I think the book is meant for a reader who is more knowledgeable about drafting than I am. The book does have many excellent drawings that help in identifying good drafting techniques versus poor techniques. Although this book is being used for a Drafting Fundamentals college course, I would tend to recommend this book to someone who already has some drafting experience. To those just beginning in a drafting course of study, this book certainly can be used but you'll come across some drafting jargon that isn't explained.

Hans moderbinding får ham til at falde for meget ældre kvinder; skildringen af et sådant forhold vakte anstød og gav anledning til tiltale og dom for pornografi. Da "Håbløse slægter" ved Højesteret var dømt usædelig, blev restoplaget beslaglagt og politiet måttet besøge alle landets boglader for at konfiskere ikke solgte kopier. I 1884 udgav Bang en revideret udgave, der kunne passere gennem censuren. I 1905 udkom en tredje udgave med nyt forord af forfatteren.

Herman Bang (1857-1912) var en dansk kritiker, forfatter og journalist, der er international anerkendt for sin impressionistiske skrivestil. Han debuterede 22 år gammel som litteraturkritiker i 1879 med essay-samlingen ”Realisme og Realister”, som også slog en ny retning i litteraturen fast. Året efter fulgte den første novellesamling ”Tunge Melodier” og den skandaleombruste roman Haabløse Slægter. I 1886 kom novellesamlingen Stille Eksistenser med bl.a. fortællingen Ved Vejen. Blandt andre hovedværker er romanerne Stuk, Tine, Ludvigsbakke og Det hvide Hus. Der stod i samtiden megen blæst om Bangs værker og han var livet igennem gestand for megen medieopmærksomhed og deciderede smædekampagner, dels på grund af hans værker, der blev anset for at være provokerende (han blev som 23-årige straffet for usædelighed og første oplag af “Håbløse Slægter” konfiskeret), dels fordi han var erklæret homoseksuel – et stort tabu sidst i det 19. Århundrede. Herman Bangs værker er fremragende eksempler på dansk litterær impressionisme.

Hard to believe that the writer was only 23 years old when first published

The is a development novel or bildungsroman, I was quite surprised to learn that Herman Bang was only 23 years old when it was first published. In my opinion Herman Bangs production falls in two groups. There are some novels he have written in a strangely unfocused way (But I think they are very praised by the critics), among those novels are Tine (Danish Edition) and Ved vejen (Danish Edition) I find it hard to be grapped by these books (Maybe the language of these books are what the scholars calls "Impressionism"?) And then there are the other novels of Herman Bang, where the language and the plot is more straigh forward, novels like Mikaël / Herman Bang (Danish Edition) and this novel, I like these books more. Allegedly Herman Bang was homosexual, for the history of literatures sake, it's a pity that Herman Bang didn't write about his homosexuality straight on, that could have been very interesting. But we would proberly never have seen those manuscripts if he had done that. For example, prior to 1967, all male homosexual conduct was illegal in the UK. And then how was it then not in Denmark around 1880 - 1900! "Haabløse Slægter" caused some scandal when it was first published, due to a sexual relation which occurs in the novel. Actually there are now and then some homosexual allusions and the male protagonist even walks around in women clothes in some parts. But I am not sure that the people making the scandal caught that. That would properly have been too much of a scandal! Herman Bang is among the great writers of Denmark.
